| VARIOUS PUMPS FOR VARIOUS TASKS |
| Three sizes (1.5", 2", and 3") of variable speed rubber impeller pumps move wine and juice. Pumps of this size and design (built by M & D Specialties) inflict the least stress possible on juice. (Not pictured are various other kinds of pumps we have purchased recently.) Owning plenty of pumps simplifies our work day and speeds loading of trucks. |

| FERMENTING TANKS |
 |
We ferment in a series of four 3,100 gallon tanks and two 6,000 gallon fermenters. The smaller tanks are capable of holding 8 tons each. The larger fermenters are 10' by 10' and have a 20 ton capacity each. The tanks are equipped with cooling jackets in order to control fermentation temperatures. |

| PUMPOVER DEVICE |
We outfit each tank with a Westec Pumpover Device to gently mix the juice with the cap during pumpovers. We pump over each tank two to three times daily to extract deep, rich flavors and colors from the skins.
