We built our production building in 1992. Nearly all of our equipment dates from 1997 to the present. A roof protects the crush pad from the elements and provides a pleasant, shaded workspace for our grapes and our staff. Hopper Image

Harvest: Grapes come in cool. No MOG: Material Other than Grapes is removed. Accuracy: Each load of grapes must pass inspection by winery principals. Bins are weighed (about 1,000 lbs) and dumped slowly into a Lugana 3R crusher/destemmer. Crusher/Destemmer: Berries remain nearly intact after passing through the destemmer, and our crusher is gentle enough to permit whole berry fermentation. Crusher/Destemmer 2: We own two cages for the destemmer: we can size the cage to the varietal at hand. We can crush approximately fifteen tons per hour.

Stems & Seeds: Biodegrade in the fields. Special Pump: A Kiber pump moves berries and juice from the destemmer's sump into the fermenting tanks. Into Fermenter: Grapes are clean, and free from diseases that disturb fermentation. Into Press: The liquid is sent into holding, and the cap is pressed out.
